Nigel firmly believes in sourcing the freshest produce locally and is now working closely with many producers and growers to enhance his menus. Nigel's close working relationship gives him the opportunity to be able to find willing partners to grow unusual products that are not readily available and to experiment in the cultivation of innovative and traditional products some of which have been lost for many years.

We are now seeing the revival of quality artisanal foods!

Food that has been grown locally and is in season tastes better, climate change is extending the British season for some produce so you have longer to enjoy homegrown fruits and vegetables. The North West has a rich culinary heritage and is home to an ever growing band of dedicated specialist producers and growers, many of whom have gained recognition nationally for the excellence of their products.
