A TASTE OF LANCASHIRE
After twenty years of establishing Northcote Manor as a leading restaurant with rooms and developing my kitchen to champion the fabulous produce that is in the Lancashire region, I decided to put together this small booklet, which I hope you will all enjoy, to re-emphasise the value of our culinary heritage and the importance of our farmers and producers.
Lancashire’s heritage as the number one county for artisan producers has become well recognised throughout the country. I have enjoyed using many of the quality raw ingredients, such as Mrs Kirkham’s Lancashire Cheese, Ireland’s Black Pudding, Reg Johnson’s poultry, meats from the Bowland Forest, game from local shoots and an array of fruit and vegetables from many Lancashire growers and Northcote’s own Gardens. I am fortunate that my local producers constantly inspire me with the quality of their produce and their enthusiasm to deliver. I am delighted this year to welcome Andrew Mellin as our new Head Gardener, an enthusiastic organic gardener with twenty years of experience working in high standard gardens across the country. There is a regular feature on our web site updating you on the latest developments in the garden.
The raw beauty of the surrounding valleys and countryside has inspired me to research our culinary heritage and incorporate local growers and producers within my menus. At Northcote we are constantly maintaining the influence of these marvellous artisan producers embracing their true rustic influences and incorporating ingredients in a stylish and gastronomic way that brings together combinations of culinary brilliance.
This section of our website is an insight to Lancashire’s most famous dish which is renowned throughout the world, and my individual interpretation of the famous Lancashire Hotpot with a combination of a not so traditional Red cabbage!
